W <br /> Intro uc ion <br /> The City of Roseville is accepting proposals from those interested in partnering <br /> the concession operations at the Roseville Slating Center. The intent is that the <br /> provider will supply and operate the food and beverage services, excluding <br /> catering services, at the Roseville Skating Center for all events, special events, <br /> practices and in general whenever groups of participants at in attendance at the <br /> RSC. The arrangement will officially go into affect by February 1, '11999. <br /> There are two concession stands at the Rs , The John Rose Minnesota OVAL <br /> has a service counter. The Roseville Arena has a newly remodeled concessions <br /> counter. Both areas have been inspected and are licensed by the Ramsey <br /> County Health Dept. The intent is for the concession operator (CO) to explore <br /> other opportunities including portable concession carts. <br /> Vending Machines/open [door Vendor Commissions/Fountain Dispensers <br /> The RSC will retain the rights to all commissions from vending machines and <br /> open door soda and food refrigerators. The CO will retain all commissions from <br /> fountain dispensers. The CO will he required to serge the RSC designated <br /> beverages (currently Coca-Cola products). <br /> Food Product Purchases and Revenues <br /> The CO will be responsible for the purchase, inventory and security of all non- <br /> vending food products. In return the CO will retain all revenues (including <br /> fountain commissions mentioned above) from concessions. The RSC will <br /> receive an agreed upon percentage of all concessions. The CO will male <br /> monthly payments to the R c. <br /> staffi n g <br /> The CO will provide, supervise and compensate all concession employees. <br /> Concession staff will be employees of the CO. The RSC will expect the provision <br /> of some services by CO staff such as the periodic receipt and registering of <br /> admissions (received at concession stand), skate sharpening fees and <br /> equipment rental fees. During busy times, these functions will be performed by <br /> RSC staff. <br /> Mena Approval <br /> The RSC will review and approve all menu selections by the CO. This approval <br /> will not he unreasonably withheld. <br /> Equipment <br /> The CO will have the rights to use all existing concessions equipment. The RSC <br /> will retain ownership of all inventoried equipment turned over to the CO at the <br /> initiation of the contractual agreement. The CO may choose not to use any or all <br /> of the RSC equipment. If they do choose to use the R c equipment, the CO will <br /> be responsible for the maintenance and operation of all RSC concessions <br />
