Program for the Prevention of Food- -Born Illness <br />Transmission in Food Service, or an equivalent <br />course. <br />Each licensed holder shat. -1 be responsible <br />for any payment of fees or charges assessed <br />for such education training program * All <br />requirements of the course must be met, including <br />ng <br />the preparatioft by the licensee and approval <br />thereof of the Quality Assurance Program for <br />the Prevention of Food -Born Illness Tian smi ss ion <br />in Food Service for the licensee's food service <br />establishment. No food establishment shall <br />be issued a Food Handler's license unless it <br />has met the requirements o f ' this ordinance. <br />Each food service establishment must submit <br />proof to the city Manager' s off ice of having at <br />least a full* -tire owner or manager, duly certi.� <br />fied according to this ordinance. The certi- <br />fied .individual need not be on the business <br />premises at all times that the' business is <br />open to' the publ.i d , however, such certified <br />individual must be employed on a full-time basis. <br />(i) Section 4 -101 shall read as follows: <br />Multi. -use equipment and utensils shall.- be <br />constructed and repaired with safe materials, <br />including finishing materials; shall be <br />corrosion resistant and nonabsorbent; and shall <br />be smooth, easily cleanable, and durable under <br />conditions of normal. use. Single- service <br />articles shall be made from clean, s ani tart' , <br />-safe materials. Equipment,. utdns i is , and single- <br />service articles shall not impart odors, color, <br />or taste, nor contribute to the contamination <br />of food. All new equipment ins to ll.ed after <br />the effective date of this ordinance shall <br />comp'l-y with the food service equipment standards <br />of the National Sanitation Foundation (NSF, <br />1978 Edition). <br />Section 7 -101 shall read as follows <br />Floors and floor coverings ngs o f all food prepara� <br />tion , food storage, and- utensil-washing areas, <br />and the floors of all walk -in rooms, toilet <br />rooms and vestibules shall be constructed of <br />smooth durable material such as sealed concrete, <br />terrazzo, ceramic tile, durable grades of <br />linoleum or plastic, and shall be rrra 4' <br />in <br />tained <br />in good repair. Nothing in this section shall <br />prohibit the use of anti s li p floor covering in <br />areas where necessary for safety reasons. <br />
