Live animals, including birds and turtles, shall be excluded from within the food service <br />operational premises and from adjacent areas under the control of the licensee. This exclusion does not <br />apply to edible fish, crustacea, mollusks, or to fish in aquariums. Patrol dogs accompanying security or <br />police officers and guide dogs accompanying blind or deaf persons shall be permitted in dining areas. <br /> <br />( e) Dressing rooms and areas. If employees routinely change clothes within the establishment, rooms or <br />areas shall be designated and used for that purpose. Those designated rooms or areas shall not be used <br />for food preparation, storage or service, or for utensil washing or storage. <br /> <br />(f) Locker areas. Adequate sloped-top lockers or other suitable facilities located at least six (6) inches <br />above the floor shall be provided and used for the orderly storage and security of employee clothing and <br />other belongings. Lockers or other suitable facilities may be located only in the designated and approved <br />dressing rooms or in food storage rooms or areas containing only completely packaged food or packaged <br />single-service articles, provided the employees' clothing and other belongings are not stored on, above or <br />by containers of food or single-serving articles. <br /> <br />(g) Laundry facilities. <br /> <br />(1) Laundry facilities in a food establishment shall be restricted to the washing and drying of linens, <br />cloths, uniforms and aprons necessary to the operation. If such items are laundered on the premises, an <br />electric or gas clothes dryer shall be provided and used. <br /> <br />(2) Separate rooms shall be provided for laundry facilities, except that such operations may be conducted <br />in storage rooms if properly segregated from completely packaged food or packaged single-service <br />articles. ' <br /> <br />(h) Linen and clothes storage. <br /> <br />(1) Clean clothes and linens shall be stored in a clean place at least six (6) inches above the floor and <br />protected from contamination until used. <br /> <br />(2) Soiled clothes and linens shall be stored in nonabsorbent containers or washable laundry bags in an <br />approved location until removed for laundering. <br /> <br />(i) Maintenance and cleaning equipment storage. Maintenance and cleaning tools such as brooms, mops, <br />vacuum cleaners and similar equipment shall be maintained and stored in a way that does not <br />contaminate food, utensils, equipment or linens and shall be stored in an orderly manner. They shall not <br />be stored in food preparation, food service or utensil washing areas. <br /> <br />(C.F. No. 93-1755, ~ 20, 12-9-93) <br /> <br />Sec. 331.20. Special event (temporary) food establishments and food vehicles. <br /> <br />(a) General. Special event (temporary) food establishments and food vehicles shall comply with all <br />applicable provisions of this chapter and shall be operated in an approved manner. The office may waive <br />specific requirements for physical facilities when, in the opinion ofthe office, suitable substitutes which <br />comply with the requirements of this section are provided and will not result in an imminent health <br />hazard. The office may limit the sale or giving away of some or all potentially hazardous foods. Before <br />commencing operations of any kind, the licensee hereunder shall notify the office that such food <br />establishment is ready for final inspection, and the office may make an inspection and issue a report <br />thereon. No special event (temporary) food establishment or food vehicle shall commence operations <br />until the requirements of this chapter have been met in accordance with the reports and orders of the <br />office. <br /> <br />(b) Restricted operations. If necessary to protect the public health, the office shall impose additional <br />requirements to protect against health hazards related to the conduct of the operation and prohibit the <br />sale or giving away of some or all potentially hazardous food.
