Stop Food Waste <br />of the Month— Program Be a Roseville Sus- <br />Veganism tainable Steward! <br />Sustainability Tip of the Month— Why Veganism? <br />This month's tip comes from Andrea Ray, our summer Sus- <br />tainability intern from the University of Minnesota! <br />In order to understand veganism, let's look at the best <br />definition of the term. Being vegan, as defined by the <br />Vegan Society: <br />"is a philosophy and way of living which seeks to ex- <br />clude —as far as is possible and practicable —all forms <br />of exploitation of, and cruelty to, animals for food, cloth- <br />ing or any other purpose; and by extension, promotes <br />the development and use of animal -free alternatives for <br />the benefit of animals, humans and the environment " <br />Fnoro by Anna Felzer on Unsplash <br />As a lifelong animal lover, I decided to go plant -based about 3 years ago. Once I <br />became aware of the logic and reasoning behind the lifestyle, I saw no reason to <br />continue to consciously contribute to the harm and suffering of innocent animals <br />across the globe. Not only did I make this change out of respect and compassion <br />for animals' lives, but also as a way to reduce my personal carbon footprint. Stan- <br />ford's News Magazine found that: <br />"Phasing out animal agriculture over the next 15 years would have the same <br />effect as a 68 percent reduction of carbon dioxide emissions through the <br />year 2100. This would provide 52 percent of the net emission reductions neces- <br />sary to limit global warming to 2 degrees Celsius above pre industrial levels, <br />which scientists say is the minimum threshold required to avert disastrous climate <br />change." <br />Veganism has not only proven to benefit animals and our environment, but has <br />also been proven to benefit human beings personally. The American Journal of <br />Clinical Nutrition found that vegan diets are associated with "a lower risk of cardio- <br />vascular disease (CVD), obesity, type 2 diabetes, and some cancers." <br />(Continued on page 2) <br />Page 14 of 76 <br />
