<br />2. MANUAL GLASS AND LARGE UTENSIL WASHING. (Chemical <br /> <br />method) A three-compartment sink meeting the conditions set <br /> <br />forth in (1) above shall be provided. The washing and rinsing <br /> <br />steps as outlined in (1) above shall be followed; however, the <br /> <br />third compartment shall be used for a bactericidal solution <br /> <br />which shall consist of one of the following methods or other <br /> <br />method approved by the Health Authority. <br /> <br />A. Completely immersed in clean water containing not <br /> <br />less than 50 parts per million of available chlorine if <br /> <br />hypochlorites are used, or not less than 200 parts per million <br /> <br />if chloramines are used, for not less than two minutes at a <br /> <br />solution temperature not less than 750F. <br /> <br />B. Completely immersed in clean water containing <br /> <br />not less than 12~ parts per million of available iodine in a <br /> <br />solution having a pH not higher than 5.0 for not less than one <br /> <br />minute and a water temperature not less than 750F. <br /> <br />C. Completely immersed in clean water containing not <br /> <br />less than 200 parts per million of a quaternary ammonia <br /> <br />solution. <br /> <br />D. By spraying or swabbing with a chemical sanitiz- <br /> <br />ing solution of at least twice the minimum strength required <br /> <br />for the particular sanitizing solution when used for immersion <br /> <br />sanitization. <br /> <br />-25- <br />
