Wc have reviewed your November 2"" <br />lettcr to Douglas .�,. Christman, Vice Presie�ent/Get�eral Counsel of Rock Bottom Restaurants, <br />Inc. and the atfi�c�aed. Notice And Order For .�Iearin�, both in response to my Mr. <br />Ch�ist���aia's request for a he�z-in� on a past liquor code violation at the Old Chicago <br />Restaurant. <br />Before both sides go to the expense of preparing for the December 11 `�` hearing <br />(which will probably be between $4,000 and $5,000 apiece), my client �esp�c��'utiy makes <br />the following �cttleznen� offer for consideration by the Roseville City CounciL �urrently, the <br />proposed penalty is no salc of liquor at the Old Chicago Restaurant on a weekend day. We <br />propose instead that there be ��o liquor satcs on a Monday. <br />To understand the practical effect of t�is offer, you should know that my client <br />will close thc entire r�staurant on either day because it simply �.} not practical to serve food <br />and not serve liquor. Closing on a Monday will cause the loss of about $3,000 in liquor <br />r.evex�ue. Closing on a Friday or Saturday will cause ihc loss of �9,�00 to $12,000 in liquor <br />rever�u�. 1 submit that the Monday closing is a significant penalty for the violation. <br />I offer the following additional facts for consideration by the City Council. <br />Staff at the Old Chicago R�stau� a�t must now attend City-approved liquor su�vice training in <br />addition to the cansider�blc training rcq�irec� by the Wadsworth Old Chicago, Inc.
