while the in-house restaurant is intended to serve food and alcohol to events, the event center <br />would on occasion work with external caterers to accommodate specific culinary preferences or <br />cuisines that the restaurant cannot provide. The Applicant reasons that working with outside <br />caterers will support the event center's flexibility and inclusivity of services. <br />The restaurant would use the existing cafe footprint and the proposed restaurant occupancy <br />capacity is 34 seats and five (5) employees to meet staffing needs. Patrons of the restaurant would <br />access the space through the main entry which would lead them directly to the restaurant space <br />which is not being reconfigured from the existing floor plan. The restaurant would utilize the <br />existing on -site kitchen. <br />In Attachment D, the Applicant stated that the restaurant would be operational when the event <br />center space is in use to provide food and beverages to the event but that the restaurant would not <br />be open to the public while the event center is in use. Based on the definitions of a restaurant in <br />Chapter 5 — Alcoholic Beverages, a restaurant with these operational restrictions would not be <br />eligible for an on -sale intoxicating liquor license. Following discussion with Staff, the Applicant <br />has provided an update to the proposal, stating that the restaurant would be open to the public <br />during regular business hours and while the event space is in use for private events.
