<br />Caramel Apple Bread Pudding <br />1 cup unsweetened applesauce <br /> <br />1 cup vanilla soymilk <br /> <br />1/2 cup fat-free egg product or 3 egg whites <br /> <br />1/4 cup brown sugar, packed <br /> <br />1 tsp cinnamon <br /> <br />1 tsp vanilla <br /> <br />5 cups of whole wheat bread cubes (preferably older bread) <br />3 T almonds 1/2 cup fat-free caramel <br /> <br />topping, heated <br /> <br />Heat oven to 350 degrees. <br /> <br />Spray 9-inch quiche dish or pie plate with non-stick cooking spray. In <br />large bowl, mix all ingredients except bread, almonds and caramel <br />with wire whisk. Fold in bread, pour into dish or pie plate and sprinkle <br />with almonds. Bake 30-40 minutes or until golden brown. Cut into <br />wedges and drizzle with caramel. <br /> <br />Pumpkin Pie <br />1 regular pre-made pie crust, unbaked <br /> <br />Filling: <br /> <br />3 egg whites or 1/2 cup fat-free egg product <br /> <br />1/2 cup sugar or Splenda@ <br /> <br />1 tsp pumpkin pie spice <br /> <br />1/8 tsp salt <br /> <br />15 oz can pumpkin (not pumpkin pie mix) <br /> <br />12 oz can evaporated fat-free milk <br /> <br />1 tsp vanilla <br />
