Tom Lyncli and Bob Rosenthal from the Knights of Columbus <br />Club were in to discuss their operation as it relates to the development of <br />Fuddrucker's to tlie nortl�. They liave been parking cars on tlie south side of <br />the old Polar Food Locker property (now being proposed to be sold to Fuddrucker's). <br />Tliey will lose this parking w}ien tlie Polar Food Locker site is developed. Tliey <br />explained tllat they tried to buy the land, but were unsuccessful. They liave <br />discussed joint use of the land with h9r. Pl�itt of Fuddrucker's. It appears <br />their peak }i�urs overlap somewhat in that restaurant peaks from 5:30 to 8:00 p.m., <br />and the bingo starts at 7:30 p,m., running to 11:30 p.m. Tlie bingo operation's <br />peak time is rri.day night, Saturday aiternoon, and Sunclay afternoon. Tlie <br />Knight's of Columbus oporation makes a substantial amount oi money; like <br />$135,000 in tlie year, which is given away to various cliarities and reinvested <br />in their facilities. <br />• 1Ve discussed ttie possibilities tliat witli t}ie kind of money tl�ey were willing to <br />pay ioi• tlie Polar Food Locker site, they could co�istruct a two-level parking <br />ramp on their property for less, ancl gain th� additional parking they neeci. <br />Tliis is assuming there are no advcrse soil conditions �hat would increase tlie <br />per car costs of a r��mp. It appears this is their only reasonable alternative, <br />which they are going to review. <br />2. St. Rose of Lima - 227-OGSS. Tom Lynch, who is an arehiCect, also represents <br />St. Rose of Lima Church, who are consiclera�ly remodeling their convent into a <br />rectory and administrativc center. Th� presen� reetory would bc remodelect as a <br />conven�, Tlle most S1�*111�1CA11� problem here is one of providin� aclequate purking <br />space near the old convent site.
