STORAGE AND HANDLING OF UTENSILS AND EQUIP- <br />MENT. After bactericidal treatment utensils and portable <br /> <br />equipment shall be stored in a clean dry place, protected <br /> <br />from flies, dust, splash and other contamination and shall <br /> <br />be handled so as to prevent contamination. Wet cold storage <br /> <br />of glasses or similar utensils is prohibited. <br /> <br />All under-counter utensil storage compartments less <br /> <br />than 18 inches from the floor shall be enclosed and doors <br /> <br />shall be kept closed except during times of meal service. <br /> <br />Enclosed automatic utensil elevators are acceptable. Facilit- <br /> <br />ies for the storage of silverware shall be provided and shall <br /> <br />be designed and maintained to present the handle to the employee <br /> <br />or customer. Shelving shall be protected by easily clean- <br /> <br />able, nonabsorbent paint, varnish or equivalent. <br /> <br />110.350. ITINERANT FOOD ESTABLISHMENT. An itinerant <br />food establishment conducting an unrestricted operation shall <br /> <br />comply fully with the provisions of this ordinance. When re- <br /> <br />stricted operations are conducted the Health Authority may <br /> <br />accept modified physical facilities, may prohibit the sale of <br /> <br />certain potentially hazardous foods and may augment require- <br /> <br />ments when in his opinion such action is necessary in the <br />-28- <br />
