<br />110.120. FLOORS. The floors in all rooms in which food <br /> <br />or drink is stored or prepared, in which multi-use utensils <br /> <br />are washed, and in walk-in refrigerators, dressing or locker rooms <br /> <br />and toilet rooms shall be constructed of smopth, nonabsorbent, <br /> <br />easily cleanable, light colored material, such as, but not <br /> <br />limited to, terrazzo, ceramic tile, durable grades of linoleum, <br /> <br />or plastic or plastic coating over tight wood (or concrete floors. <br /> <br />The floor covering must be grease resistant in all areas where <br /> <br />grease or fatty substances are normally used and may drip or spill <br /> <br />on the floor. In areas, such as non-refrigerated dry food <br /> <br />storage are~s, the floor shall be of easily cleanable construction <br /> <br />All floors shall be kept clean and in good repair. Floor drains <br /> <br />shall be provided in all rooms where floors are subject to <br /> <br />flooding-type cleaning or where normal operations release or <br /> <br />discharge water or other liquid waste on the floor. Carpeting, <br /> <br />rugs or natural stone may be used on floors of interior dining <br /> <br />areas if kept clean and in good repair. Abrasive safety strips <br /> <br />may be used whenever deemed necessary to prevent accidents. In <br /> <br />every new or remodeled food establishment a coved jQncture of <br /> <br />at least ~" radius between the floor and the wall, except in <br /> <br />serving areas, shall be constructed or installed. All exterior <br /> <br />- . <br /> <br />areas where food is served shall be kept clean and properly <br /> <br />drained, and such areas shall be finished so as to facilitate <br /> <br />mairtenance and minimize dust. <br /> <br />-9- <br />
