Revenue sharing is becoming a bit of a dirty phrase in the food truck <br /> industry; more and more events seem to see us as a way to generate additional revenue for them, rather <br /> than recognizing us as something that will draw more people to the event. As a general rule, I(and many other <br /> trucks) tend to avoid events where we're asked to pay a fee or a percentage of sales. That being said, I'm a big <br /> fan of the Lions. I have no desire to encroach on their sales, and I'm more open to donating a percentage of sales <br /> to a good cause such as theirs than I would be if the money was just going to an event organizer. I'd be willing <br /> to discuss it, although my truck does have some overlap with the Lions trailer(burgers comprise about 50% of <br /> our overall sales), so I would want to make sure that we can find a mutually beneficial arrangement in that <br /> regard. Overall, I think you could definitely attract some quality trucks to an event like this, depending on <br /> estimated attendance and such. I'd love to discuss in further detail. <br /> Bald Eagle Waterski Shows: I've driven past these more times than I can count! Unfortunately, I've never been <br /> able to stop and watch. It does seem to draw a fairly large crowd. I'm not sure how Marketfest impacts this; is <br /> attendance much lower during Marketfest? Also, if your expected attendance is 150-200, I would recommend <br /> sticking with one truck. Generally speaking at something like this, roughly 40% of attendees will order food <br /> from a truck. If you draw 200 people, this means about 80 will eat. Most trucks would prefer at least <br /> somewhere between 80-120 sales for any event during the summer(most of us can handle anywhere from 75- <br /> 100 people per hour at max capacity, so there really isn't a concern about not being able to keep up, either). I'd <br /> be very interested in giving this a shot if it's one truck; if you choose to expand to 2, I'd be a little more hesitant. <br /> Overall, I think you've got some solid opportunities here, and I'd be happy to do what I can to help them be <br /> successful from a food truck standpoint.
