At least 10 foot candles shall be provided on all <br /> <br />other sur~~ces and equipment, and in dressing and toilet rooms. <br /> <br />In storage ~reas a minimum of 5 foot candles of light at <br /> <br />30 inches ~~om the floor shall be provided. Subdued lighting <br /> <br />in dining a~eas and public access areas is acceptable: provided <br /> <br />that lighting of 10 foot candles is available and used during <br /> <br />the clean-up period. <br /> <br />110.160. VENTILATION. All rooms or areas in which food <br /> <br />or drink is normally prepared or stored after preparation or in <br /> <br />which utensils are washed, toilet, dressing and locker rooms am <br /> <br />garbage and refuse Snrage rooms shall be well ventilated. <br /> <br />Ventilation hoods or canopies shall be installed over equipment <br /> <br />where grease vapors or smoke are produced in the preparation of <br /> <br />food. Such hoods or canopies shall be designed to prevent <br /> <br />grease or condensation from dripping into the food or onto food <br /> <br />preparation' surfaces'.. The ventilation systems shall be installed <br /> <br />in strict conformity to existing Village ordinances. Well <br /> <br />ventilated shall mean, that iodors, fumes, vapors, smoke, heat or <br /> <br />condensation is reduced to a negligable level. Air replacement <br /> <br />vents shall be designed to permit the entrance of an equal <br /> <br />volume of displaced air and to prevent the entrance of insects, <br /> <br />rodents, dust or other contaminating materials. <br /> <br />-11- <br />
