<br />racks or cabinets and hand drying equipment must be kept clean <br /> <br />and in good repair and the soap and towels in sufficient supply. <br /> <br />It shall be unlawful to use utensil washing, food washing, or food <br /> <br />preparation sinks as facilities for hand washing. <br /> <br />110.210. GARBAGE AND REFUSE STORAGE AND DISPOSAL. All <br /> <br /> <br />garbage and rubbish containing food waste shall, prior to disposal, <br /> <br />be kept in leak-proof, nonabsorbent containers which shall be <br /> <br />kept covered with tight-fitting lids when filled or stored, or <br /> <br />not in continuous use, provided that such containers need not be <br /> <br />covered when stored in a special vermin-proof room or enclosure or <br /> <br />in a food-waste refrigerator. All other rubbish shall be stored <br /> <br />in containers, rooms or areas in a manner approved by the Health <br /> <br />Authority. The rooms, enclosures, areas and containers used, shall <br /> <br />be adequate for the storage of all food-waste and rubbish <br /> <br />accumulating on the premises between normal removal intervals. <br /> <br />Adequate cleaning facilities shall be provided and each container, <br /> <br />room or area shall be thoroughly cleaned after the emptying or <br /> <br />removal lofgarbage and refuse. Food-waste grinders, if used, <br /> <br />shall be installed in compliance with Village ordinances. Garbage <br /> <br />and refuse should be disposed of with sufficient frequency and in <br /> <br />a manner so as to prevent a nuisance. <br /> <br />110.220. INSECT AND RODENT CONTROL. Effective measures <br /> <br />must be taken to prevent the entrance, breeding or presence within <br /> <br />the food establishment or on the premises of insects, rodents and <br /> <br />other vermin. <br /> <br />-14- <br />
